It consists of soft unsweetened dough biscuits covered in thick “country” or “white” gravy, made from the drippings of cooked pork sausage, white flour, milk, and often (but not always) bits of sausage, bacon, ground beef, or other meat. The gravy is often flavoured with black pepper. In some parts of the southern United States this is also called sawmill gravy.

Snippet:  Homemade buttermilk biscuits and gravy is a favourite for breakfast or brunch. Originally the recipe grew out of necessity and availability. In Southern USA, pork sausage was very popular so home chefs made use of the dish and all it offered. The grease from cooked sausage was turned into a white gravy, using flour, milk and water, along with other ingredients. Then buttermilk biscuits were cooked and served with the gravy for a filling and tasty meal. The result, a white, thick and soft-textured gravy poured over two or three biscuits about the size of a hand. The biscuits (made with buttermilk and flour) look like clumps of fried dough and are usually round. The dish is served piping hot and in a bowl or deep dish.
