Snippet: An Empire biscuit is a sweet biscuit popular in the United Kingdom, particularly Scotland, and other Commonwealth countries. The biscuit was originally known as the “Linzer Biscuit”, and later the “Dutch Biscuit”. With the outbreak of World War I it was renamed to Empire biscuit, except in Northern Ireland where it remains known as the German Biscuit and is commonly found with a jam and coconut topping. It is also known as the “Belgian biscuit”, due to being topped in a similar way to a Belgian bun made of pastry or dough.
